Almond Flour Cookies With Matcha For A Healthy Twist
Ingredients
For the Cookies
• 1 cup almond flour
• half cup granulated erythritol
• 1/4 cup coconut flour
• 1/4 cup unsalted butter, softened
• 1/4 cup unsweetened almond milk
• 1 massive egg
• 1/2 teaspoon vanilla extract
• 1/4 teaspoon baking soda
• 1/4 teaspoon matcha powder
• 1/4 teaspoon salt
For the Matcha Glaze

– 1/2 cup powdered sugar
– 1 tablespoon matcha powder
– 1 tablespoon milk
– 1/2 teaspoon vanilla extract

For the Cookies
Instructions:
- Preheat the oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and sugar till light and fluffy.
- Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the almond flour, matcha powder, baking powder, and salt.
- Gradually add the dry elements to the wet ingredients, mixing until just mixed.
- Roll the dough into 1-inch balls and place them on the prepared baking sheet.
- Flatten the balls slightly with a fork.
- Bake for 10-12 minutes, or till the edges are golden brown.
- Let the cookies cool on the baking sheet for a couple of minutes earlier than transferring them to a wire rack to chill utterly.
For the Matcha Glaze
To put together the Matcha Glaze, whisk collectively the following ingredients in a small bowl until smooth and lump-free:
1/2 cup (60g) confectioners’ sugar
1/4 cup (30ml) almond flour cookies recipe milk (or different plant-based milk)
1 teaspoon (2g) matcha powder

Adjust the consistency of the glaze as needed by including more confectioners’ sugar for a thicker glaze or more almond milk for a thinner glaze.
