Ingredients
Dough
8 oz part skim mozzarella cheese
3 oz cream cheese
3/4 cup coconut flour
2 eggs
1 tsp baking powder
1 tsp xanthan gum
1 tsp vanilla extract
1/2 tsp vanilla stevia
1/4 cup confectioners Swerve
1/4 tsp salt
Filling
8 oz cream cheese
1 egg yolk
1 tsp vanilla extract
1 tsp vanilla stevia
1/2 cup fresh cranberries
1/3 cup Sukrin Fiber Syrup Clear
Optional Glaze Topping
3 tbsp heavy cream
1 tbsp milk
2 ounces cream cheese
2 tbsp Confectioners Swerve sweetener
1/2 tsp vanilla extract

Instructions
Preheat the oven to 400 degrees F.
Melt you mozzarella and cream cheese together over the stove on low heat or in the microwave for 2 minutes. Stir well to thoroughly combined.
Whisk the remaining dough ingredients together then wet your hands with warm water and combine the dry with the melted cheese mixture until it forms a dough like texture.
Line a baking sheet with parchment paper and roll out the dough to an oval shape. You can wet hands and flatten the dough or place another piece of parchment over the dough and use a rolling pin. Set aside to make filling.
Add the cream cheese, egg yolk, vanilla extract and stevia to a stand mixer and blend on high until smooth. Add cranberries to a small bowl and mix with Sukrin syrup.
Spread the cream cheese mixture down the middle of the dough. Top cream cheese with cranberries.
Cut diagonal strips of dough lengthwise on each side of the oval shape and overlap the strips towards the center.
Bake for 12-15 minutes until golden brown. Allow to cool then refrigerate.
When ready to serve, add optional topping if desired. Simply place all ingredients into a blender and blend until smooth. Drizzle over the danish and enjoy!
