Almond Flour Cookies With Chia Seeds For Fiber
Ingredients
For the cookies:
1. 1 cup almond flour
2. 1/4 cup chia seeds
3. 1/4 cup coconut oil, melted
4. 1/4 cup maple syrup
5. 1 teaspoon vanilla extract
6. 1/2 teaspoon baking soda
7. 1/4 teaspoon salt
For the chia egg:
Ingredients:
- 1 tbsp flax seeds
- 3 tbsp water
Instructions
To make the chia egg:
In a small bowl, mix 1 tablespoon of chia seeds and three tablespoons of water.
Let sit for five minutes, or until the chia seeds have absorbed the water and shaped a gel.
This gel will act as a binder within the cookies, replacing the need for eggs.
To make the cookies:
Preheat oven to 350 levels F (175 levels C).
Line a baking sheet with parchment paper.
In a big bowl, mix Almond Flour Cookies flour, baking powder, and salt.
In a separate bowl, cream collectively butter and sugar until gentle and fluffy.
Beat in the egg and vanilla.
Add the moist elements to the dry ingredients and mix until simply combined.
Stir in the chia seeds.
Drop by rounded tablespoons onto the ready baking sheet.
Bake for 10-12 minutes, or until the edges are frivolously browned.
Let cool on the baking sheet for a few minutes earlier than transferring to a wire rack to cool fully.
